High Protein Change

Two weeks ago I moved out of a wonderful house I lived in over the last five years with two of my best friends and into a dreamy house in the country with my boyfriend.  Big change.  Lots of transitions and new routines to be made.  I thrive on routine and work best when I know what to expect (of myself and my day). 

Moving made this hard. 

Since I’ve been in the new house, I’ve committed to the following:

  • Exercise 6 days a week (with my new Tracey Anderson videos or good long walks )
  • Clean up my diet (anything at this point is better than what I was eating… beer, pizza, etc)
  • Spend more time doing nothing

All of these goals are about routine for me.  It’s a matter of making time in my schedule and also being realistic about what I can do.  Doing some food prep ahead of time or making food that is good on-the-go makes a big difference. 

I recently made this high protein muffin recipe.  I’m experimenting a lot more with almond flour because it’s high protein, lots of vitamin E, high fiber and tasty.  It is more expensive that wheat flour, as it costs about $5-8/pound.  But as a gluten free option it easily replaces wheat flour because you don’t need to add binders (xanthum gum, corn startch, etc). And I eat better when I have good snacks around.Mixing the batter

High Protein Apple Muffins

2 1/4 cups almond meal
3-4 eggs
1 organic apple finely chopped
1 very ripe banana
1/3-1/4 cup coconut oil
1/3 cup water
1/2 tsp baking soda
1-2 tbsp cinnamon
1/4 c raisins (optional)
dash of salt

Pre-heat oven to 350.  Mash the banana then add all other ingredients and mix by hand.  The batter will not be super thick, but more like a cake batter.  Using a bit more coconut oil, grease a muffin tin.  Fill the tins about 3/4 of the way full.  batterBake for 20-25 minutes.  You will know they are done when you can insert a toothpick into the middle of a muffin and it comes out clean.Makes approximately 16 muffins.

Yummy muffin and coffee!These aer perfect for a snack, for breakfast, anything!  I love how easy they are to grab out of the fridge and eat.  You can also freeze them and bring out the number you eat each week.

I LOVE that these muffins have no sugar in them - finding tasty things without sugar is a constant challenge for me. Look forward to making them.

Yes! I love sweetening baked goods with fruit. Especially the fruit that is on its way out and wouldn't taste that great fresh.
